14 High Fiber Muffin Recipes

I’m always a fan of having muffins around for an easy breakfast or snack, especially when I can make a batch ahead of time. These recipes use things like oats, whole wheat flour, fruit, vegetables, seeds, and nuts to add more fiber without making breakfast feel complicated.

Most of these are easy to make ahead too so you can have a few ready to go when breakfast sneaks up on you.

Here are some of my favorite high fiber muffin recipes:

1. Chocolate Kodiak Cake Muffins

These chocolate muffins are soft and fudgy, with Greek yogurt helping keep the texture nice and tender. The Kodiak Cakes mix adds whole grains and protein, while the mini chocolate chips give you little bits of chocolate throughout. They’re also easy to make in one bowl and take about 30 minutes from start to finish.

2. Chocolate Chunk Banana Muffins

The ripe bananas keep these muffins really moist, while the dark chocolate chunks give you little bursts of chocolate in every bite. White whole wheat flour and bananas add fiber, and Greek yogurt gives them a tender texture while adding a little protein. They’re also a one-bowl recipe, so they’re pretty easy to throw together when you want something sweet for breakfast or a snack.

3. Healthy Whole Wheat Morning Glory Muffins

There’s a lot going on in these muffins, with shredded carrots, grated apple, raisins, and oats packed into a soft, hearty muffin. The whole wheat flour and oats add fiber, while the orange juice, cinnamon, and ginger give them a little extra flavor. They’re a good one to make ahead when you want something substantial for breakfast or a snack.

4. High Protein Kodiak Pumpkin Muffins

These have that cozy pumpkin-spice flavor you want from a pumpkin muffin, but the Greek yogurt helps keep them soft and moist. Kodiak mix and pumpkin puree bring both protein and fiber, with 8g of protein and 3g of fiber per muffin. If you like chocolate and pumpkin together, you can also fold in some chocolate chips.

5. Banana Blueberry Oatmeal Muffins

The ripe bananas add plenty of natural sweetness, while the blueberries give you little bursts of berry flavor throughout the muffins. Rolled oats and whole wheat flour add fiber, and you can use fresh or frozen blueberries without thawing them first. I’d make a double batch of these and freeze some for those mornings when you need something quick.

If you only need one muffin, this one is about as easy as it gets. The banana, cinnamon, and maple syrup give it that cozy banana bread flavor, while the oats and hemp seeds add fiber and a little protein. Just mix everything in a mug and microwave for about two minutes, and you’ve got a warm breakfast without making a whole batch.

The applesauce helps keep these bran muffins soft and fluffy, while honey adds just a little sweetness without making them taste overly sweet. Wheat bran and whole wheat flour give them a hearty texture and 4g of fiber per muffin, and the orange zest and cinnamon add a little extra flavor. They’re a good one to make in a batch and keep around for an easy breakfast or snack.

8. ABC Muffins

The name pretty much tells you what’s inside: apples, bananas, and carrots all packed into one little muffin. The banana and applesauce keep them naturally sweet and tender, while the finely shredded carrot and white whole wheat flour add a little more texture and fiber. Since they’re made as mini muffins, they’re especially handy for lunchboxes, snacks, or little hands.

These have that classic bran muffin flavor, with honey and brown sugar adding a little sweetness and cinnamon bringing in some warm spice. Wheat bran is what gives them their fiber, while yogurt helps keep the muffins moist and adds a little protein. They’re also easy to make ahead and can be kept at room temperature for up to five days or frozen for later.

These have a lot going on, with carrots, raisins, coconut, flaxseed, and nuts all packed into a hearty muffin. The orange juice and zest add a little brightness, while applesauce and sourdough discard help keep them moist. They also freeze really well, so I’d make a batch and save some for busy mornings.

11. Eggless Ragi Cake

This is basically a chocolate cake with a few ingredients you wouldn’t normally expect in one, like ragi flour, dates, and ripe bananas. The dark chocolate and cacao give it plenty of chocolate flavor, while the cashews add a little crunch throughout. Each slice has 6g of fiber, and the recipe is eggless and naturally gluten-free thanks to the ragi flour.

12. Easy Cheesy Veggie Muffins

Think of these as a savory take on cornbread, with cheddar cheese, peas, and carrots folded right into the batter. Garlic, onion, and parsley give them a little extra flavor, and the whole wheat flour brings each muffin up to 3g of fiber. They’d be fun for breakfast or served alongside a bowl of soup or chili.

13. Lemon Blueberry Muffins

Lemon zest and juice give these muffins a bright citrus flavor, while the blueberries add little bursts of sweetness throughout. Oat flour and almond flour keep the texture soft and tender, and they’re naturally gluten-free without needing a specialty flour blend. If you use frozen blueberries, there’s no need to thaw them first, which helps keep the batter from turning blue.

14. Banana Blackberry Oatmeal Muffins

If you have a few overripe bananas sitting around, this is a good way to use them up. The blackberries add little bursts of tartness to the soft banana muffins, while the rolled oats give them a heartier oatmeal texture. Just be sure to cut the blackberries in half and let the oats sit in the wet ingredients for a few minutes before mixing the batter.
