Ingredient Notes
Servings: 10-12 truffles | Prep Time: 15 minutes | Chill Time: 30 minutes
- ½ cup almond flour – I love almond flour in this recipe because it creates a cookie dough-like texture.
- ¼ cup rolled oats – For extra fiber and structure to balance out the almond flour.
- ½ cup unsweetened cocoa powder – for all the extra chocolatey flavor!
- ¼ cup protein powder – It boosts the protein content and helps hold the dough together. I used Naked’s Grass Fed Whey, and I LOVE that this protein powder is unflavored and absorbs the recipes flavors.
- 1/3 cup maple syrup – I think maple syrup compliments the chocolate, but you can also do honey or dates here for a natural sweetener.
- 1/4 cup chocolate hazelnut spread – Think of Nutella here or your favorite chocolate nut butter spread!
- 1 tsp vanilla extract – I have been using vanilla paste as well which works beautifully.
- 1/2 tsp espresso powder (optional but highly recommended) – I strongly recommend you include this as it deepens the chocolate taste.
- 2–4 tbsp milk of choice – Helps the dough come together. Add slowly until the batter is just right.
- 1/4 cup mini chocolate chips (optional) – For that extra fudgy chocolate brownie texture.
- Pinch of salt
Instructions

- Blend dry ingredients: In a food processor, pulse the oats until finely ground. Then add almond flour, cocoa powder, protein powder, espresso powder, chocolate chips and salt. Blend to combine. Here’s the unflavored whey protein I like!

- Add wet ingredients: Add maple syrup, Nutella-style spread, and vanilla extract. Blend until a thick dough forms.
- Adjust texture: If it’s too dry, add milk 1 tbsp at a time until the dough is scoopable but not sticky.
- Roll into balls using a spoon or small cookie scoop.
- Optional coating: Roll in cocoa powder or drizzle with melted chocolate.
- Chill for 30 minutes to set. Store in fridge up to 1 week or freeze for longer
Note: easily double the recipe for extras to store in the freezer and pull out later.

Variations
- Swap the hazelnut spread for sunflower seed butter and use oat or seed milk.
- Want to keep them vegan? Just use a plant-based protein powder, dairy-free chocolate chips, and your favorite non-dairy milk.
- If you want to lower the sugar, you can use monk fruit sweetener or even swap the maple syrup for dates if you prefer something more whole-food based.
- Stir in some chopped almonds, walnuts, chia seeds, or flaxseeds for added texture and a little extra fiber and heart healthy fats.
- Use vanilla protein powder and skip the espresso powder for a more classic cookie dough taste.

They can be! These ones use simple, whole-food ingredients like almond flour and oats. While they aren’t super low in calories (because of the nut-based ingredients), they’re nutrient-dense and designed to keep you full and satisfied.
