Air Fryer Skirt Steak (Tender in 10 Minutes)

Skirt steak is one of those cuts that’s fantastic when it’s cooked right and chewy when it’s not, and the air fryer makes the “right” part easy. This version uses a simple soy sauce and lime marinade with chili powder and cumin, and the steak cooks in just 6 to 8 minutes at 400°F. You can marinate it for as little as 30 minutes, and there’s no pan sear and no extra dishes. As a dietitian, I love that skirt steak is an excellent source of protein and nutrients like iron and B vitamins too.

Recipe Highlights

  • Simple, pantry-friendly marinade. It’s olive oil, soy sauce, lime, garlic, chili powder, and cumin.
  • Fast marinade window. 30 minutes works. Overnight is not required.
  • One flip, no sear. Everything happens in the air fryer.

Ingredient Notes

Full amounts are in the recipe card below. Here’s what matters and why.

  • Skirt steak (1 to 1.5 lbs): I used outside skirt, which is thinner, more tender, and cooks faster. Inside skirt works too, but it’s a little chewier, so give it the longer end of the marinade time. If you see a thick, shiny membrane on the steak, trim it off.
  • Soy sauce: Low-sodium is my pick. Regular soy sauce makes the finished steak taste salty, especially after a long marinade.
  • Lime juice: Fresh, not bottled. It brightens the marinade and helps tenderize, but don’t go past 8 hours or the texture turns mushy.
  • Garlic: Fresh and finely minced. You’ll wipe most of it off before cooking so it doesn’t scorch at 400°F.
  • Chili powder and cumin: Regular chili powder is best here, not cayenne. If you’re sensitive to heat, start with less.

How to Cook Skirt Steak in the Air Fryer (Step by Step)

  1. Cut the steak to fit. Skirt steak is long. Cut it crosswise into 2 or 3 pieces, each about 6 to 8 inches, so every piece fits flat in the basket.
  2. Mix the marinade. Whisk the olive oil, soy sauce, lime juice, garlic, chili powder, cumin, salt, and pepper in a small bowl.
  3. Marinate. Put the steak in a zip-top bag or shallow dish, pour in the marinade, press out the air, and seal. Massage the marinade into the steak for 20 seconds, then refrigerate for at least 30 minutes or up to 8 hours.
  4. Preheat. Set the air fryer to 400°F and preheat for 3 to 5 minutes. A hot basket gives you a better crust.
  5. Load the basket. Lay the pieces in a single layer with a little space between them. Don’t overlap. Cook in two batches if you have to.
  6. Cook and flip. Air fry for 3 to 4 minutes, flip with tongs, then cook another 3 to 4 minutes (6 to 8 minutes total). Start checking the temperature at 6 minutes.
  7. Check the temp. Slide an instant-read thermometer in from the side of the thickest part. Pull the steak at:
    • 130 to 135°F for medium-rare
    • 140 to 145°F for medium
The temperature climbs a few degrees as it rests. USDA’s safe minimum for whole cuts of beef is 145°F with a 3-minute rest, so go to 145°F if you’re serving young kids, pregnant guests, older adults, or anyone immunocompromised.
  8. Rest. Move the steak to a cutting board for 3 to 5 minutes. Don’t skip this, or the juices end up on the board instead of in the meat.
  9. Slice against the grain. Look for the long lines running down the meat. Cut across those lines in thin slices, at a slight angle.

Inside vs. Outside Skirt Steak vs. Flank Steak

  • Outside skirt is more tender and faster to cook. This is what I used.
  • Inside skirt is a bit tougher, but great with a longer marinade time if you have it.
  • Flank steak: A fine swap, but it’s thicker and needs a longer cook time. Rely on your thermometer here instead of cook time from the recipe.

Expert Tips from the Test Kitchen

  • Don’t skip the marinade! Even 30 minutes here goes a long way.
  • Flip halfway for even cooking.
  • Cook to temperature, not just time. Air fryers vary a lot, and skirt steak is thin, so I’ll show you what temp to pull it at.
  • Adjust cooking time depending on your preferred doneness. If you like your steak barely pink to well done, bump up the cook time to 10 minutes, still flipping halfway. If you like it extra rare, go down to 5-6 minutes, still flipping halfway.
  • Always slice against the grain for the most tender bite. Slicing with the grain will create a tougher meat to chew.

Inside vs. Outside Skirt Steak vs. Flank Steak

  • Outside Skirt Steak: More tender, and it is faster to cook.
  • Inside Skirt Steak: A bit tougher, but works well with longer marinades.
  • Flank Steak: Can be used instead of skirt steak, but flank steak typically requires longer cooking times.

Notes

Let the steak cool, then store it in an airtight container in the fridge for 3 to 4 days.
Reheat in the air fryer at 350°F for 2 to 3 minutes, or in a hot skillet for a minute or two per side.
It’s also great cold on salads.
